Thai Peanut Nachos

My husband & I have recently been obsessed with Thai food. We had the most amazing thai food in Flagstaff Arizona at the beginning of the year, but I had never made any of my own. I love ginger-soy sauces & peanut sauces, so I thought I would try some different recipes at home. When my sister raved about these amazing Thai Peanut Nachos that she ate at a food truck in MO, I had to try them for myself. However, I don’t have any plans to visit Missouri soon, & nachos would not be appetizing to send through the mail, so I began searching for a recipe that I could tweak a little for myself. Here you go!


For the Chicken:
1-2 boneless, skinless chicken breasts
1-2 tbsp soy sauce
1 tbsp organic peanut butter
1 tbsp raw honey

Put the chicken breasts into a slow cooker with about a tablespoon of soy sauce.
Let cook for about 4 hours until the chicken is cooked through & fall-apart-tender.
Shred chicken in the slow cooker, add more soy sauce if it’s dry, & add a tablespoon of peanut butter & a tablespoon of honey.
Cook for 30 minutes or until the peanut butter & honey are melted & mixed in the chicken.

*Tweak – add a tablespoon of ginger-soy sauce to the chicken instead of plain soy sauce if you’re a ginger lover like me


For the Sauce:
3 tbsp soy sauce
1-2 tbsp raw honey
1 tbsp organic sweet chili sauce
1-2 tbsp organic peanut butter

Simmer above ingredients on low-medium heat until the peanut butter is smooth & the sauce isn’t lumpy. Add 1 tbsp water if the sauce is too thick.

*Tweak – Add a little Sriracha in place of the chili sauce if you want a little spice


To Assemble:
about 14 oz tortilla chips
1 1/2 cups Monterey Jack/Cheddar shredded cheese
handful of shredded carrots
1 can pinto beans
3 organic green onions, sliced
1/4 cup chopped peanuts
1/4 cup chopped cilantro


Spread the chips onto a baking dish, add chicken, pour the sauce over, then add the carrots, about 1/2 of the green onions, & all the cheese.
Broil in the oven about 2-3 minutes, once the cheese has melted. Add the rest of the green onion, the chopped peanuts, & the cilantro on top.
Finish with a squeeze of fresh lime & a little Sriracha (optional).
