Yogurt Parfait Recipe

Grape Berry Delight

This is a recipe that my mother-in-law, Donae, first gave me. We were going to make it today, but when we couldn’t find the original recipe, we decided to create our own. It is super S I M P L E & easy to customize based on what you like/want. Not only is it easy, but is is so H E A L T H Y for you! Yes, I said healthy! And I don’t mean the “low-fat, low-sugar” healthy (<< aka processed & unhealthy), I mean the “full of nutrition, protein, fiber, & good fat” healthy. You know, the kind of fat that we are supposed to have?! The G O O D kind… ever heard of it?! :)

Ingredients:
16 oz. plain cream cheese (room temperature)
16 oz. plain Greek yogurt
1 tsp. vanilla extract
8 packets (4 tsp.) organic Stevia (or 1/4 cup brown sugar or agave)
7 cups grapes (red &/or green)
2 cups (or 1 pint) blueberries
1-1/2 cups chopped walnuts (optional)

Wash your grapes & blueberries and dry thoroughly.

Meanwhile, add the cream cheese, Greek yogurt, Stevia (or sugar or agave), & vanilla extract to an electric mixer (or handheld mixer) and mix until there are no lumps & it is creamy.

Add the grapes & chopped walnuts to your creamy yogurt mixture by folding in with a spatula. Fold the blueberries in last to avoid crushing them with the walnuts.

Feel free to add more or less fruit, sugar, or walnuts. Donae & I both loved the added crunch the walnuts gave!
Once it’s all mixed together, you’re done!

This is such a healthy, yummy dish, & we have used it as a side for breakfast, lunch, dinner, or even as our dessert! If you want some extra protein, especially for the morning, add a scoop of vanilla protein powder. My favorite is Arbonne vanilla protein powder. (<< contact me if you want to try some)

Top with some more walnuts as a garnish & E N J O Y !

Let me know what you would add or take away if you made this dish! I’d love to hear your feedback.

I’m not the biggest fan of blueberries so I would probably do strawberries instead. Or maybe even try frozen bananas and strawberries! Or peaches! Yum it all sounds good! You literally cannot go wrong with cream cheese and Greek yogurt!

    1. Strawberries would be amazing in this! I also though maybe coconut flakes would be good if you like coconut. :)

  2. Wow! This is making my mouth water! Looks amazing!!
